How to make my braided brioche with hazelnut frangipane

L’anno nuovo è iniziato allo stesso modo in cui è terminato quello vecchio: giornate frenetiche, impegni che si accumulano, scadenze che si avvicinano, pensieri che non passano.
Con l’inizio del 2019 ho preso una decisione che rimandavo da molti mesi, perché per me molto dolorosa: così i pensieri si accumulano ulteriormente.
Non ho dubbi sul fatto che fosse la scelta giusta, ma questo non la rende meno dolorosa.
Nella vita si affrontano sempre molti cambiamenti, alcuni belli ed altri decisamente meno.
Negli ultimi anni la vita mi ha regalato tantissimo, mio marito e mio figlio su tutto, ma è stata brutale e spietata nel togliere.
Le decisioni che conseguono richiedono tempo di elaborazione che forse non basterà mai, ma sono scelte giuste. Per me, per noi.

Quando decido di mettere in stand-by il cervello, la cucina è sempre la mia più preziosa alleata.
In questo caso, avevo voglia di realizzare una brioche molto scenografica, ed essendo appena passato il periodo delle deliziose Galettes des rois (principalmente costituite da sfoglia e crema frangipane), mi è venuta voglia di richiamare in parte quei dolci.
Ne consegue questa splendida e profumata corona, perfetta per merenda e colazioni.

BRIOCHE INTRECCIATA CON FRANGIPANE DI NOCCIOLE

Ingredienti per una brioche

per l’impasto
4 g di lievito di birra disidratato
50 g di zucchero semolato
200 g di latte intero
370 g di farina per pane (11% di proteine su 100 g di farina)
40 g di burro morbido
1 uovo
1 pizzico di sale

per il ripieno
130 g di zucchero
60 g di burro morbido
1 uovo
150 g di nocciole tostate, tritate
i semi di 1 bacca di vaniglia
4-5 gocce di estratto di mandorla amara

per la glassa
20 g di mascarpone
20 g di burro morbido
75 g di zucchero a velo
1 cucchiaio di latte

Preparazione

IMPASTO
Nella ciotola della planetaria mettere il lievito di birra, la farina, lo zucchero ed il sale e mescolare brevemente con una forchetta.
Mescolare latte con l’uovo sbattuto.
Attaccare il gancio ad uncino, azionare la macchina a media velocità ed iniziare ad aggiungere il mix di latte e uovo.
Mettere il burro per ultimo ed impastare per una decina di minuti, finché l’impasto sarà perfettamente incordato.
Mettere l’impasto in una ciotola, coprire con pellicola da cucina e lasciar lievitare a temperatura ambiente e lontano da correnti fino al raddoppio del volume (un paio d’ore circa).

PREPARARE IL RIPIENO
Mentre l’impasto lievita, preparare il ripieno.
Tostare le nocciole in un pentolino, senza aggiunta di grassi.
Frullarle in un robot da cucina con piccoli impulsi ed aggiungendo lo zucchero, così da non far irrancidire gli olii sprigionati dalle nocciole surriscaldando troppo il tutto.
Lo zucchero aiuta ad assorbire gli olii.
Aggiungere il tutto al burro morbido, unire l’uovo, la vaniglia e l’estratto di mandorla.
Tenere da parte.

FORMARE LA BRIOCHE
Un volta lievitato l’impasto, spolverizzare poca farina sul piano da lavoro e stendere un rettangolo di circa 35×45 cm. Più si riesce a stenderlo, più giri e “strati” si otterranno, rendendo l’effetto della brioche ancora più bello.
Stendere il ripieno su tutta la superficie dell’impasto, poi arrotolare dal lato corto del rettangolo, fino a formare un salsicciotto.
Con un coltello ben affilato, tagliare il salsicciotto per tutta la lunghezza, così da ottenere 2 cordoni.
Metterli con la parte tagliata rivolta verso l’alto, così da vedere bene tutti gli strati, ed attorcigliarli tra loro come una treccia.
Chiuderla a cerchio e disporla in una teglia da forno di circa 24 cm di diametro.
Coprire con pellicola e lasciar nuovamente lievitare fino quasi al raddoppio.

COTTURA
Preriscaldare il forno a 180°C, ventilato.
Rimuovere la pellicola ed infornare la brioche per circa 35 minuti, o fino ad avvenuta cottura e doratura desiderata.

GLASSA
Se si vuole aggiungere, mentre la brioche cuoce preparare la glassa semplicemente mescolando tutti gli ingredienti insieme.
Prelevare la brioche cotta dal forno, lasciar raffreddare 5 minuti, poi aggiungere la glassa e, se piace, spolverizzare con zucchero in granella o zuccherini vari.

SWIRL BRIOCHE WITH HAZELNUTS FRANGIPANE

Ingredients for one brioche

for the dough
6 g active dry yeast
50 g caster sugar
200 g full fat milk
370 g bread flour (11% proteins for 100 g flour)
40 g soft butter
1 egg
a pinch of salt

for the filling
130 g caster sugar
60 g soft butter
1 egg
150 g finely grounded hazelnuts
1 teaspoon vanilla extract

for the glaze
20 g mascarpone cheese
20 g soft butter
75 g icing sugar
1 C milk
sprinkles (optional)

Method

THE DOUGH
In the bowl of your stand mixer put the lukewarm milk and half of the sugar. Sprinkle in the yeast and allow it to activate, about 5 minutes.
The mixture should froth and foam slightly.
You can stir it gently to make sure all the yeast has been moistened, but if the yeast does not foam, dump it out and start over.
Once the yeast has been activated, stir in the remaining sugar, the flour, the egg and the salt and stir to combine. Once combined add the softened butter. Scrape the sides of the bowl and then continue to beat on medium speed until the dough is moist and slightly stretchy.
Lightly grease a large bowl and place the dough inside, covering it tightly with a piece of plastic wrap.
Allow the dough to rest in a warm spot in the kitchen until it has approximately doubled in size, about 2 hours.

THE FILLING
While the dough is resting, prepare the filling, mixing together all the ingredients.
Set aside.
If you like to, you can also add a couple handfuls of chocolate chips.

FORM THE SWIRL
Once the dough has risen, roll it out into a 12”x18” rectangle on a lightly floured surface and spread the filling all over the dough.
Starting with one of the long ends, roll the dough somewhat tightly into one long tube and pinch the ends of the dough to seal in the filling.
Use a sharp knife to slice down the middle of the length of the dough.
You should end with two strands of rolled dough.
Turn the exposed innards of the dough roll to face upwards and then twist the dough, right over left until the entire length of dough has been twisted into one long piece.
Join the ends of the dough to make a ring, pinching the ends together slightly.
Carefully transfer the ring of dough into a lightly greased 10” cast-iron skillet (or use some baking paper). Cover the skillet with a piece of plastic wrap and allow the dough to rest for 1 hour.

BAKING
Preheat the oven to 360°F (180°C).
Once the oven is preheated and the loaf has risen slightly, bake for about 30-35 minutes, or until the dough is puffed and golden brown throughout. Allow to cool slightly.
Once cooled slightly, combine the ingredients of the glaze and drizzle it all over the brioche, adding sprinkles if you like to.
Brioche is best served warm and will keep covered at room temperature for 2-3 days.
