How to make homemade spinach and ricotta “fagottini”(stuffed pasta): cutest pasta ever!

La pasta fatta in casa è una di quelle cose che chiama alla mente lunghe, lunghissime ore di lavoro. Quelle stesse ore di lavoro che la maggior parte delle persone, normalmente, deve impiegare a fare altro.

Sembra di parlare di preparazioni fuori dal tempo e dallo spazio moderno, relegate nei ricordi, in qualche film di quando eravamo piccoli o vecchie fotografie sbiadite. Io stessa ho vecchie foto di me, a casa dei nonni, col grembiule ed il mattarello, intenta a stendere un ritaglio di pasta gentilmente lasciatomi da nonna per poter pasticciare un po’. Avrò avuto 6-7 anni, non di più. E la felicità stampata sul viso.

Ora, io per lavoro passo molte ore in cucina, ma ammetto che non mi capita spesso di fare la pasta fresca. Non so perché, ma mi viene in mente di rado.

Poi capita che si compri per sbaglio 2 vaschette di ricotta: che ci faccio?

Gli spinaci ci sono, le uova pure… Potrei fare della pasta ripiena! Poi la voglia di giocare torna a galla, ed invece dei soliti ravioli, ecco spuntare uno, due e poi tre sacchettini. Li adoro. Mio figlio è già al settimo cielo all’idea di mangiarseli: come dargli torto? 🙂

FAGOTTINI RICOTTA E SPINACI

Ingredienti per 50-60 fagottini

per il ripieno *

300 g di ricotta

300-350 g di spinaci (già scongelati e strizzati, quindi al netto. Io sono partita da circa 500 g di spinaci surgelati)

abbondante parmigiano grattugiato

noce moscata a piacere

sale

pepe

per la pasta**

4 uova

2 cucchiai di olio extravergine d’oliva

400 g di farina 00

1 pizzico generoso di sale

*parmigiano, noce moscata e sale vanno a piacere, è difficile dare una dose precisa. Si assaggia preparando. Io metto due manciate generose di parmigiano

**Anche qui: per le uova potrebbero bastarne anche 3, dipende dallo spessore a cui si tira la pasta. A me sarebbero bastate, tanto che mi è avanzato un totale di 180 g di pasta che ho tirato e tagliato a tagliatelle.

Preparazione

Scongelare e strizzare benissimo gli spinaci. Unire la ricotta, la noce moscata, abbondante parmigiano, sale e pepe a piacere.

Tenere da parte.

Impastare la farina con le uova, l’olio ed il sale: si deve ottenere un impasto sostenuto, assolutamente non appiccicoso. Coprire con pellicola e lasciar riposare 10-15 minuti.

Stendere delle sfoglie di pasta (con la macchinetta per la pasta è decisamente più semplice. Io uso gli appositi rulli accessori della planetaria) e con un coppapasta di circa 8-9 cm di diametro ritagliare dei dischi.

Farcirli con una noce di impasto, inumidire appena i bordi e ripiegare a mezzaluna, facendo combaciare i lembi di impasto. Premere bene, partendo dal ripieno (per evitare formazioni di bolle d’aria che spaccherebbero i fagottini in cottura), poi arricciare le verso il centro, pizzicando la pasta, fino a creare il fagottino. E’ importante premere benissimo una volta chiuso il sacchettino, per evitare che lo spessore sia veramente eccessivo e resti crudo anche una volta cotti.

Per servirli, tuffarli in acqua bollente, salata, e portare a cottura. Condirli col sugo scelto (qui solitamente li mangiamo con burro e salvia o con un semplicissimo sugo di pomodoro e basilico).

ENGLISH VERSION

FAGOTTINI WITH SPINACH AND RICOTTA FILLING

Ingredients (how many fagottini you’ll get depends on how thin you’ll have your pasta sheets and how much you’ll stuff each one. I got 50-60 pieces)

for the dough

4 eggs

400 g all purpose flour

2 tbs e.v. olive oil

1 generous pinch of salt

for the filling

300 g ricotta cheese (the driest, the better)

300-350 g defrost spinach (I start from a 500-550 g frozen spinach to get the desired amount, once defrosted)

2 handfull Parmigiano Reggiano cheese (it’s really up to you how much. It can be something around 60-80 g)

some grated nutmeg, to taste

salt

pepper

DOUGH

Mix the flour and salt in the bowl of your stand mixer fitted with the paddle attachment. Add the eggs and knead for 1 minute, or until the dough starts to form. If you need it, you can add 1 tablespoon of water to help the dough form. Knead by hand for 1 minute, until you have a smooth dough. Shape into a ball, cover with plastic wrap and let it rest at room temperature for 15-20 mins.

FILLING

Defrost your spinach and squeeze them extremely well, until you remove all the water. Chop them roughly. Combine the spinach with ricotta, Parmigiano Reggiano cheese, some grated nutmeg, salt and pepper. Taste and add salt or Parmigiano if necessary.

SHAPE AND COOK (OR FREEZE)

Roll out the dough to 1 mm thick, cut out approx. 50 circles with a cookie/pasta cutter or a glass (each 10 cm in diameter). Keep the dough covered at all times to prevent it from drying out. Brush the pieces of dough with a little water, place 1 tsp full of filling in the middle of each circle. Gather the edges together, press together above the filling, pressing out any trapped air (if you don’t remove the air they’ll open while boiling). Press very well to reduce the thickness, just to be sure you don’t end up with perfectly baked pasta with some row bites. Place the fagottini on a lightly floured tea towel.

Now you can both cook them immediately or freeze them. I make a big batch, so I can freeze some and have them ready to bake whenever I want.

Cook the fagottini in simmering salted water for approx. 7 mins. Remove the fagottini with a slotted spoon, transfer to a bowl, add the sauce of your choice.

We usually eat them two ways.

SIMPLE TOMATO SAUCE

In a saucepan add 2-3 tbs of e-v olive oil, 2 cloves of garlic (I add them cut in half: as not everyone loves garlic, I simply let it toast in the oil until it starts to get golden, then remove. You’ll have the taste of it but no garlic in your mouth), 200 g tomato sauce. Let it cook on medium heat for 20 -25 minutes, adding some water if it is too thick. Add salt and pepper and some fresh basil leaves. Add some grated Parmigiano Reggiano once you toss the pasta and you’re ready to enjoy.

BUTTER, SAGE AND PARMIGIANO REGGIANO SAUCE

Simply put some butter and sage leaves in a saucepan: let the butter melt and go golden, add some salt and pepper. Toss the pasta, add some freshly grated Parmigiano Reggiano on top and they’re ready.
