How to make homemade salted caramel and chocolate small cups

Giocare col caramello salato è stato piuttosto divertente (ok, ognuno ha le sue fisse :)). Ci stiamo avvicinando a grandi passi verso le prime idee legate al Natale, e queste mini coppette con caramello, noci e cioccolato sono tra le candidate principali a finire tra i regali homemade di quest’anno, inutile nascondersi dietro un dito.

Nel caso in cui pensaste di infilarle in qualche sacchettino di biscotti misti, devo avvisarvi che dovrete realizzarle usando un ripieno differente -di cui vi scrivo nelle note a fondo ricetta – (sempre caramello, ma una volta freddo e pronto tende ad essere un po’ più sodo). Consiglio comunque, nel caso vogliate regalarli, di usare una scatola, così che non si rovescino e “svuotino”.

MINI COPPETTE CON CARAMELLO SALATO E CIOCCOLATO

Ingredienti per 18 biscotti

110 g di burro

60 g di zucchero a velo

1 pizzico di sale

2 tuorli sodi

200 g di farina 00

i semi di mezza bacca di vaniglia (oppure 1 cucchiaino di estratto)

120-140 g di caramello salato

50 g di cioccolato al 60% cacao, fuso

noci q.b. (facoltative)

Preparazione

Per prima cosa, preparare le uova sode. Metterle in un pentolino coperte di acqua fredda ed 1 cucchiaino d’aceto, portare a bollore e lasciar cuocere per 10 minuti. Togliere dal fuoco, lasciar raffreddare 5 minuti, poi scolarle, passarle sotto l’acqua fredda ed aprirle, recuperando solo il tuorlo.

Tenere da parte.

Nella ciotola della planetaria (oppure in una ciotola capiente, e con l’aiuto delle fruste elettriche) mescolare, a crema, il burro con lo zucchero a velo ed il sale. Aggiungere i tuorli e proseguire a lavorare a crema.

Una volta che si avrà un composto omogeneo, aggiungere vaniglia e farina, ed impastare fino ad avere un impasto soffice, con la consistenza della plastilina.

Pesare l’impasto e dividerlo per 18 (si otterranno 18 pallette da circa 22 g l’una): formare delle pallotte e disporle su una teglia foderata con carta forno . Se si possiede, è molto comodo utilizzare una teglia da mini muffins come questa:

Fare un foro al centro delle pallette, pressando bene con le dita o con l’aiuto di un cucchiaio di legno o di un bicchierino.

Riporre in frigo.

Preriscaldare il forno a 180°C.

A forno pronto, infornare i biscotti per 15 minuti. Dopo i primi 10 minuti, aprire con cautela il forno e, sempre col cucchiaio o un bicchierino, premere nuovamente al centro del biscotti, che nel frattempo si saranno gonfiati.

Ripetere il procedimento a cottura ultimata, appena sfornati, quando sono ancora soffici e malleabili.

Farcirli con mezzo cucchiaino di caramello, oppure disponendo qualche pezzetto di noce sul fondo del biscotto e poi sopra il caramello.

A parte, far fondere il cioccolato, metterlo in una sacca da pasticceria e decorare i biscotti.

Lasciar raffreddare completamente prima di consumarli.

NdA: Il ripieno al caramello salato tende a restare morbido. Se si preferisce un ripieno che, una volta freddo, sia più sostenuto, si può realizzare usando 150 g di caramelle mou morbide e 75 g di panna. Basta mettere entrambi gli ingredienti in un pentolino e far fondere le caramelle a fuoco dolce. Aggiungere un pizzico di sale e lasciar raffreddare.

ENGLISH VERSION

SALTED CARAMEL, CHOCOLATE AND WALNUTS MINI CUPS

Ingredients for 18 cup

110 g unsalted butter

60 g icing sugar

1 pinch of kosher salt

2 hard boiled egg yolks

200 g all purpose flour

The seeds of half vanilla pod (or 1 ts of vanilla extract)

120-140 g salted caramel

50 g dark chocolate (60% cacao), melted

walnuts (optional)

Method

Preheat oven to 350º and line two baking sheets with parchment.

Hard boil your eggs (put them in cold water, bring to boil and count 10 minutes from the boiling moment: let them cool 2 minutes in the hot water, then put them in cold water for 5 minutes), then take the yolks and set them aside.

In a large bowl, whisk together flour and salt.

In the bowl of your stand mixer (fitted with the paddle attachment) beat butter and sugar until pale and fluffy, about 3 minutes. Beat in egg yolks and vanilla, then add dry ingredients in two batches until incorporated.

Using a small cookie scoop, scoop 18 balls onto prepared baking sheets (I love using a mini muffins tin, that’s why they look more like cups, but you can totally proceed with the baking sheets). Press a thumbprint into center of each ball.

Bake until edges of cookies are golden, about 15 minutes. During the cooking time (I’d say after 5-6 minutes) carefully open the oven and, with the help of the back of a wooden spoon, press gently the center of the cookies, to keep the depth of the holes intact.

Repeat the process as you remove them from the oven, when ready. Add the walnuts (if desired) and then 1/2 teaspoon of caramel.

Melt the dark chocolate, pur it in a piping bag and add it to the cookies. Leave to cool completely on baking sheets before serving.

Note: the salted caramel filling remains quite soft even once cold. If you’d like a more stiff caramel, you can make it using 150 g of soft caramel candies and 75 g heavy cream. Simply mix both ingredients in a saucepan and let the candies melt completely on a low heat. Add a pinch of salt and let cool.
